Pinterest Test is a feature in which my daughters and I try out one of the thousands of pins I have collected on Pinterest. This feature will include recipes, beauty tips, crafts, etc. (you name it – I most likely pinned it!). Feel free to follow me on my personal or blog account.

This Week’s Pin is:

It’s Not Summer Yet Greek Pasta Salad

Pin from JoytheBaker.com

Orzo salad

Ingredients

For the Dressing:

1/3 cup olive oil

3 tablespoons fresh lemon juice

1 tablespoon minced shallots

2 teaspoons Dijon mustard

2 teaspoons honey

sea salt and fresh cracked black pepper to taste

For the Pasta Salad:

5 cups cooked orzo pasta

2 cups de-seeded and coarsely chopped English Cucumbers

2 cups halved cherry tomatoes

1 heaping cup crumbled feta cheese

1/2 cup thinly sliced purple onion

1/3 cup chopped fresh basil

sea salt and fresh cracked black pepper to taste

Directions

I like to make my salad dressings in a mason jar with a tight-fitting lid.  If you don’t have a jar, you can also vigorously whisk the mixture in a large bowl.

In a medium mason jar combine olive oil, lemon juice, shallots, mustard, honey, and a pinch of salt a fresh cracked black pepper.  Secure the lid tightly and shake vigorously until emulsified.  Taste and season with more lemon, honey, salt, or pepper as necessary.  Set aside.

In a large bowl toss together orzo pasta, cucumber, tomatoes, feta cheese, onion, and fresh basil.  Season lightly with salt and pepper.  Just before serving, drizzle in the dressing. Taste and season accordingly.  Serve immediately.

Final Verdict:

My family loved this but I thought it was ok.

I made this for our Easter Sunday party. I thought it tasted ok but next time I want to add more Dijon mustard for flavor. Our party was for 30 people so I cooked two 12 ounces boxes of orzo pasta and I tripled the dressing recipe. But not all the pasta was coated with the dressing so next time I would quadruple the recipe.

Have you tested out any pins recently that were hits or misses?

This was my first time cooking orzo so I want to try more recipes. It was a nice light side dish. Thanks Iza!
